A well-known method of storing frozen raspberries is sugar-filled preforms. Perhaps the most popular are raw grated raspberries with sugar, raspberries in sugar syrup, and whole berries with sugar.
Grated raspberries with sugar.
Take prepared raspberries and sugar in a 1: 1 ratio. If you do not like very sweet jam, you can use sugar to taste, then use three tablespoons of sugar per pound of raspberries. It is most convenient to use a blender for pureing, however, you can grind raspberries with sugar with a tablespoon or rub them through a sieve. Test the product for sweetness in the process and add sugar to the raspberries as you see fit. Remember that consuming too much sugar can harm your health. Divide the resulting mass into small portions in containers and put in the freezer.
Raspberries in sugar syrup.
Make a light sugar syrup. To do this, take water and sugar in a 2: 1 ratio. Heat the water on the stove, without boiling, and add sugar to it. Stir the sugar until the crystals are completely dissolved. Then bring the syrup to a boil and then immediately remove from the stove. Cool to room temperature.
Put the washed berries in plastic containers of suitable size – these can be trays or ordinary disposable cups of a suitable volume. Then pour the syrup over the berries and cover the container with the lids. If you used cups, you can use a bag or cling film as a lid. As with freezing puree in an ice cube tray, place the container very firmly so that the contents do not spill over the edges of the cups.
Note! In this recipe, instead of syrup, you can use grated raspberries with sugar, prepared according to the previous recipe – this way you will fill the berry with raspberry syrup rather than sugar.
Whole raspberries with sugar.
Take containers that are suitable for the size and arrange the berries in one layer. Then cover this layer with sugar, and then spread out the next layer of raspberries. Lay the fruits in layers, sprinkling them with sugar, to the top so that the lid freely covers the container without crushing the berries. Then put it in the freezer. With this method of preparation, an average of 4-5 tablespoons of sugar is consumed per pound of raspberries.

How to freeze, how to store.
In order for the raspberries to remain intact, they must be frozen very quickly. at a slow cooling rate, the resulting water crystals damage the structure of the berry. In the freezers of many models of refrigerators there is a narrow shelf designed for freezing bulk products. This place will be optimal for placing a tray with raspberries or a bag of berries laid out in one layer. You can also use freezers or chests for freezing – as a rule, all types of these household appliances have quick freezing and temperature control functions.
After the berries have been frozen in one layer, they are easily separated from each other and do not form a whole berry ball. Now you can take them out of the freezer and put them in a convenient container – for example, in a plastic container, or pour all the raspberries into one bag. A complete violation of the rules for storing raspberries will be the re-freezing of a product that has already been subjected to such processing once. In this case, the fruits lose their shape, taste and quality. It is better not to eat such a berry.
If the raspberries were still damaged during the preparation process and gave juice, they can be chopped with a blender and frozen using small containers or ice molds. To freeze mashed potatoes in ice cube trays, it is convenient to put the mold itself inside a bag with a fastener and put it in the freezer for initial freezing. Such a blank can be used, for example, for jam or compote.
